Jawbox Gin – Classic Dry Gin, Belfast Cut

Jawbox Gin, which is also known as Classic Dry Gin can be described as ‘Greatness Through Graft and Craft’. A bottle of Jawbox, Belfast Cut classic dry gin, involves three different stages before coming to your home and being new favorite of the family.

But first, let’s see what makes ‘Belfast’ that special.

In all, Jawbox features no fewer than eleven fine botanicals. Most of these are ‘steep and boil’, and three use the vapour extraction method to preserve their delicate aroma.

The process of creating Jawbox involved much tinkering, in a quest for the perfect balance in flavour and finish. According to the manufacturers of this gin the making story to create a very special spirit involves three different stages; The Nose, The Palate and The Finish been followed. The Nose; Big, bold juniper and pine notes balanced with coriander and clean citrus.

Jawbox is triple distilled very slowly in a traditional copper pot, with eight of the eleven botanicals infused in the spirit. The final three botanicals are put through the vapour extraction method to preserve their delicate flavour and aroma. Local heather from Black Mountain, which overlooks the city of Belfast, is amongst its distinctive blend of botanicals.

​​Created in 2016, Jawbox Gin takes its name from “when the front door was left unlocked and in the kitchen stood the Belfast sink, clothes, dishes and children got washed there, a lot of craic was heard around the Jawbox. It still is.”

Overall the gin feels balanced and in terms of a hybrid aged product, very sympathetic to the underlying gin. Accessible, smooth and cunningly nuanced. It is safe to say it would be my new favorite for Friday nights.

For serving suggestion The Jawbox recommended serve, aka the Perfect Swerve, is Jawbox Small Batch Gin mixed with ginger ale and a wedge of lime.

I would also recommend a 50ml serving of gin and a 100ml serving of tonic water. As also this is 1:2 parts in cocktail terms.

Use a nice long glass or even better, a large Spanish-style copa glass with a stem and a big mouth (any decent wine glasses will work for this). All the lovely citrus notes are undeniable, but this could shine with a more subtle mixer.
